This week we had the best delivery every! A box full of yummy seafood delivered to our door. With it being Lent and Fridays being seafood days in our like like most New Orleans houses this couldn’t have come at a better time. Inside the Lenten Favorites Box box sent to us by World Port Seafood was Argentinian Red Shrimp, Pub-Style Cod, Fire-Roasted Lemon Garlic Tilapia Fillets, Stuffed Sole with Crabmeat & Mushrooms. The shrimp where calling my name so I decided to whip up these super easy shrimp tacos. These are so easy it will take you less than 30 minutes to put dinner on the table on a busy Friday night during Lent.

Super Easy Shrimp Tacos
To make these tacos you’ll need:
- corn or flour tortillas. We used corn.
- minced garlic
- Chef Paul’s Seafood Magic
- package of coleslaw
- lemon juice
- lime juice
Heat your tortillas according to package directions and set aside. Put oil in a skillet on medium heat, add shrimp, Chef Paul’s seafood magic, and about a teaspoon of minced garlic (I like a lot of garlic so add as much or as little as you prefer). Cook shrimp on each side for about 3-4 minutes until done.
While the shrimp are cooking mix your coleslaw and citrus mayo sauce. In one bowl add your coleslaw, 1/2 cup of mayonnaise, 1 teaspoon each of lemon juice and lime juice and 1 tablespoon of honey. I only used about 1/3-1/2 bag of coleslaw for 4 tacos. In another bowl add 1/2 cup of mayonnaise, 1 teaspoon each of lemon juice, lime juice and paprika.
Put coleslaw on tortilla, add shrimp and top with the mayonnaise citrus sauce.
That’s it, super easy and perfect for a quick Friday dinner during Lent or for Taco Tuesday!

For the other fish in our box we plan to do fish and chips with the cod, lemon garlic tilapia over a bed of sauteed garlic asparagus with mushrooms, and with the stuff sole we are going to make a spaghetti squash al gratin.
