Watergate Salad was a staple in our family growing up. It was at EVERY, and I do mean every family get-togethers and celebration. I loved it growing up, and I love it now as an adult.
However, traditional Watergate Salad is FULL of sugar. Between the cool whip and the instant pudding and the marshmallows and the pineapple, it's almost TOO sweet. WAY too sweet. So when I decided to start cutting sugar, I looked for ways to keep my favorite treat still but with less sugar.
When searching keto and sugar-free pudding desserts, I noticed that people were mixing sugar-free pudding with heavy whipping cream. I thought to myself, and I wonder if this could work for Watergate Salad, and it did! The result is the Watergate Salad I loved as a child with less sugar. It's the perfect sweet treat!
Watergate Salad Ingredients
- One box of Jello Sugar-Free Instant Pistachio Pudding
- One can of pineapple tidbits
- 1/2 cup of chopped pecans
- 2 cups of heavy whipping cream
If you must, you can add in marshmallows, but that kind of defeats the purpose of making it less sugary.
How To Make Watergate Salad
After you gather your ingredients, you will want to put the packages of pudding and heavy whipping cream in a bowl and mix it until it's like whip cream.
Now add in your pineapple and pecans and slowly mix them in until well blended.
Put in a serving bowl in the fridge until it's time to eat.
That's it! It's that simple to make.
Don't forget to double or triple the recipe if you are making this for a crowd!
